The higher inner value of organic products is visible!
The higher quality of organic products is noticeable in the better flavor, but also in the crystal formations. The pictures above clearly show that the crystal structure in conventionally-grown products is irregular, and almost chaotic. In comparison, the structure in organic vegetables is regular and harmonious. The more uniform the structure, the higher the quality.
The data were examined in 1988 by DOK-Versuch, in a comparison of organically and conventionally grown potatoes.
Phyto-nutrients
Phyto-nutrients are chemically very diverse compounds that are found solely in plants. Fruits and vegetables are rich in phyto-nutrients. They provide considerably more health protection than isolated nutrients.
Some of the most well known phyto-nutrients are:
Carotinoids
such as beta carotene (in carrots and apricots) and lycopene (in tomatoes). These have strong antioxidant qualities against free-radicals, and aid the skin in production of pigment cells.
Polyphenols
These include the violet/red betacyans in beetroot juice and flavonoids in berry juices. They are effective antimicrobials and antioxidants.
Monoterpenes (in citrus fruits)
These substances are found primarily in oranges, lemons and grapefruits. Monoterpenes can have anti-carcinogenic characteristics.
